This recipe includes one of the simanim of Rosh Hashono. Try it for a good and healthy new year!
- Wash a bunch of beet leaves or 3 thick stalks of leeks well. (According to Halacha, you should cut the leek stalks, separate them, soak them in soapy water for a few minutes, and wash them well.)
- Blanch in boiling water for a few minutes until softened and drain.
- Put the leaves in a food processor together with 2-3 cloves of garlic, an egg, 2-3 tablespoons of bread or oat crumbs, salt, pepper, and cumin, and grind in pulses. Brush baking paper with a little olive oil, and make medium mounds with a spoon from the dough.
- Bake in the oven on the turbo setting until browned and turn for a few more minutes to brown the other side. 🍽️
Enjoy!
